Probably one of the hardest things that I had to give up when I gave up eating meat was French onion soup. I actually continued to eat it for the first few months until I discovered it actually wasn't vegetarian. Why do they need to put in beef broth? It's a veggie soup! Well, after making it myself I know why they use beef broth, it's part of the flavor. I have heard that there is a vegetarian "beef' broth, so when I make this again, I will be using that instead. I used just a regular french onion soup recipe and subbed in veggie broth, but I had to double it to get more a flavor out of the soup. Eh, either way though, French onion soup is all about the BREAD AND CHEESE! Since I don't have oven safe bowls, I had to melt the cheese on the bread in the over then add it to the bowl, it works just as well.
